Tip : Making deep fried vegetables in less oil

Nowadays, I am sharing tips for reducing oil consumption  in our daily diet. As a matter of our health consciousness, lets continue to focus on optimizing the oil intake through our veggies.
After curry & dry veggies, here is the tip to reduce total oil intake in the veggies, which we cook by deep frying like dum-aloo, gobhi-masala, aloo-parawal (in my recipe dated 12.6.2018)

  • Keep the vegetables aside after deep frying.
  • Take out the entire oil from the wok leaving just 2tsp in it.
  • Put your masala for sauté without adding any further oil.
  • Sauté slightly and add the fried veggies kept aside.
  • Now sauté the masala along with fried veggies.
  • The excess oil in the veggies will help you sauté your masala fully.
  • Your veggie is ready, if it’s a dry one. And if it’s a gravy veggie, add water for gravy and prepare it as usual.
