Vibrant Sprouts

Ingredients

Whole green gram -2 tbsp

Yellow bell pepper - 1tbsp

Green bell pepper - 1tbsp

Red bell pepper - 1tbsp

Cottage cheese - 1 tbsp

Sweet corn - 1 tbsp

Baby corn - 1tbsp

Lemon -1

Black salt - ¼ tsp

Black pepper powder - ½tsp

Chaat masala -½tsp

Common salt as per taste

Fresh coriander to garnish

Method

1. Soak green gram in water for 1 day.

2. Next day, strain out the water & wrap the soaked gram in muslin cloth. Keep the bag for 3 to 4 days, maintaining the moisture. Let the gram sprout and the quantity would increase two-folds. [Alternatively, you may purchase sprouted gram, directly.]

3. Dice down all the veggies, baby corn and cottage cheese into small cubes (approximately, ½cm) . Keeping the cubes small, will enhance the wholesome taste of the salad.

4. Boil sweet corn and baby corn in microwave for 5 minutes at 900 Watts.(keeping 1tsp of the stock for later).

5. In a bowl, mix  all the diced ingredients, sweet corn, baby corn, lemon juice, black salt, pepper powder and chat masala. Add salt to taste.

6. Give a gentle toss to the salad.

7. Before serving, garnish the salad with the veggies (kept aside earlier, in step 4) and fresh coriander leaves.
