Tip : Making dry vegetables in less oil

Day before yesterday, I shared a tip on how to make curries for veggies with lesser oil. Now it’s time for dry ones.



Making dry vegetables in less oil
     
            
  1. Heat the regular amount of oil you use.
  2. Now, take out 2/3 of it & start making the veggie with the remaining 1/3 oil, as you make normally.
  3. Most of the vegetables release water but some needs water to be added while being cooked. That's why the excess amount of oil, if added in the beginning, only gets wasted.
  4. So, once the veggie is cooked properly, keep adding small amounts of oil, periodically, when its time to sauté the veggie.
  5. Keep doing oil addition (in small amounts) & sauté, till the time you think the veggie is ready.
  6. You will be surprised to note that your veggie is ready having some oil left from the quantity you normally take.
  7. This tip would not only reduce the use of oil but also make the veggie  tastier.

Recipe : Kamal-gatte ki sabji.

After our “Aloo-Tinda” was liked by many, lets prepare one more sessional  veggie which can only be found in the menu of your own kitchen and bring accolades to you that only you can prepare even this type of typical veggie delicious.
Bringing to you-

Kamal-gatte ki sabji.

The synonyms to this veggie are Kamal-kakdi, Nudru, Muraar, and Lotus-stem (in English).
Ingredients:

Lotus stem                  ½ kg
Onion                          4-5 medium
Garlic                           8-10 cloves
Mustard Oil                 1½ tbsp
Gram flour                    2 tbsp
Salt                              as per taste
Turmeric powder          ½ tsp
Garam masala               ½ tsp
Coriander powder         1 tsp
Maggi Masala-e-Magic  1 tsp

Method:

  1. After washing lotus stem properly, cut it into pieces of 2½ inches.
  2. Boil it in a pressure cooker; allowing 2 whistles on high & 3 on sim flame.
  3. Once the pressure is down, peel & cut them further, into pieces of ½ inches.
  4. Dry roast gram flour (besan).
  5. After heating up the 1 ½ tbsp oil in a wok, take out 1 tbsp from it.
  6. Put onion-garlic paste & all the dry spices, in the wok. Slightly sauté it.
  7. Add lotus stem into the wok; mix it well & close the lid.
  8. Keep stirring periodically. Remember to close the lid every time. Continue doing this till the lotus stem gets rolled with the masala & also gets cooked properly.
  9. Now, open the lid.
  10. Sprinkle 1 tbsp roasted gram flour & 1tsp oil on it. Sauté it well.
  11. Repeat step 10 again.
  12. Mix the rest of oil while stirring. Sauté it well.
  13. Your Kamal-gatte ki sabji Is ready.

Making vegetables in less oil

Are you getting healthy day-per-day? Are you tensed about your health? Then this tip is really worth it for you. This tip, if used, could reduce the amount of oil used daily to ½ & even ¼, in curries.

  1. Take the amount of oil you use regularly, in a wok & let it heat up.
  2. Leaving ¼ of it in the wok & take out the rest.
  3. Now, add masala to it & sauté the same.
  4. While doing so, keep adding small amounts of oil into it.
This would sauté the masala in ½ of the oil you use regularly.
If you want to do the same in ¼ of the oil; then instead of oil, in the 4th step, use water.
Though this process is time taking, but it's guaranteed that, the taste wouldn't get affected, even when the amount of oil used would be reduced.
