Fasts are generally
observed with dishes full with ghee/oil & they are mostly, boring kuttu
pooris & pakories. But let’s have something different this navratri. It
uses less amount of ghee, has a tasty filling of cottage cheese and is a dosa!
Yes, you read it correct. It’s a falaahari dosa, i.e. made up of buck wheat
flour or kuttu ka atta. It’s a quick & easy recipe, which wouldn’t make you
compromise on the taste. Also, unlike other recipes, it's beneficial for diabetic patients(as Kuttu ka aata is good for them). So without further ado, presenting
Kuttu ka dosa
Ingredients:
- Buck wheat flour (kuttu ka atta) 250 gm
- Cottage cheese (paneer) 200gm
- Halite (sendha namak) according to taste
- Clarified butter (ghee) 50 gm
- Coriander (fresh)
- Chillies (green) as per taste
Method:
- Grate the cottage cheese, mix it well with coriander, little bit of sendha namak & chillies and then keep it aside.
- Now take the buck wheat flour and add water to it, to get a dosa batter’s consistency. Then, add a bit of sendha namak to this mixture.
- Dab clarified butter on a non-stick pan.
- Now, pour the batter onto the pan & spread it equally. Turn on the flame.
- To make the dosa crispy, spread more ghee around the edges.
- When the side gets golden-brown, flip it to the other side.
- After both the sides get golden-brown, turn off the flame.
- Now, place the filling prepared in step 1 & roll it up.
- Tip: Don’t heat up the pan until the batter is poured onto it(in step 3 & 4).
- Buck wheat flour already contains gluten, so there’s no need to mix potatoes or colocasia to it, while preparing dosas.
