Have you ever thought of doda barfis which you can
have in fasts? If no, then think of it now. Navratri is going on and so I’m
here with a recipe for all the people with a sweet-tooth, which they can even
have in fasts. When people are told to have barfis made up of chestnut flour(सिंघाड़े का आटा) or
buck wheat flour(कुट्टू
का आटा) they move two steps behind. But, once they will taste these barfis,
they would always move four steps ahead and want more everytime. So, this recipe
tells you about how to make chestnut-flour barfi in doda barfi style. These sweet
tastes just like doda barfis and it can be consumed even in fasts. So, are you
ready?
Falahari Doda Barfi
Ingredients:
Chestnut flour(सिंघाड़े का आटा) 250gm
Khoya 100gm
Ghee(clarified butter) 50gm
Sugar 150gm
Water 100ml
Dry fruits(cashew, almonds, raisins, coconut, etc.)
Method:
- Take a teaspoon of ghee in a frying pan.
- Add chestnut flour to it & roast(भून) it, at
low flame, till it turns slightly brown.
- Now, turn off the flame. Add sugar and stir a bit. Let the mixture cool down.
- In another pan, take khoya. Roast(भून) it, at
low flame, till it becomes slightly pinkish.
- Add water to the chestnut-sugar mixture, and stir well.
- Mash the roasted khoya, to break the lumps.
- On medium flame, add both the mixtures & stir continuously to avoid lumps.
- Meanwhile, add finely chopped dry fruits to the mixture & keep stirring, continuously.
- When the mixture starts drying up, turn the flame to low & keep adding ghee(leaving 2 teaspoons for further use) periodically, accompanied by continuous stirring.
- After the required texture is achieved, turn off the flame.
- Take a plate or barfi moulds and grase them with a teaspoon of ghee.
- Pour the barfi mixture and tap it once on your working station to make the surfave smooth.
- Further, smoothen up the upper layer of barfis with ghee(1 tsp).
- Allow the mix to cool down. De-mould and garnish the barfis with cashews.
