From today
onwards I would be posting the recipes on Fridays, so that you can try them out
in the weekends.
We try
everything to please our child’s tongue. But this delicacy - Khandvi - that comes
all the way from Gujarat, in India, is not liked by some of them. So keeping
their taste and choices in mind, here’s my first Friday recipe. Also, many
people think that making khandvi is really difficult. But this way is really
easy. The dish is easy to digest, too. So give it a try this weekend and let
me know in the comments about it.
Instant Cheesy Khandvi Bite
Ingredients:
For khandvi:-
1 cup
besan(gram flour)
1
glass(300ml) lassi(made of sweet creamy curd)
¼ tsp salt
¼ tsp ghee
¼ tsp
turmeric
For filling:-
Amul creamy
cheese
Fresh coriander leaves
Method:
- In a small steel container(that can fit in your cooker), mix flour, lassi, turmeric and salt, to make a lump-free mixture.
- In a cooker take 1¼ cup of water.
- When, the water starts boiling, keep a steel bowl in the cooker.
- Now, keep the steel container (containing khandvi mixture) in the cooker at medium flame, and allow five whistles.
- Meanwhile, grease a plate or tray with ghee.
- After 5 whistles, take out the container & stir the mixture vigourously, till it becomes like a thick lump-free paste.
- Once the batter gets ready, quickly spread it on the tray & let it cool down for 5 minutes.
- Then, spread creamy cheese onto the khandvi sheet, in considerable amounts.
- Sprinkle finely chopped coriander leaves on the cheese.
- Cut the sheet into straps of 1-1½ inches.
- Roll the straps with light hands, as applying pressure would result into the breaking of the straps.
- Your silky and smooth Cheesy Khandvi Bite is ready.
Note:
- Don't season Cheesy Khandvi Bite, as cheese won't taste good when seasoned.
- For an authentic Gujarati Khandvi taste, replace cheese with grated coconut and a pinch of grated ginger seasoned with mustard seeds and curry leaves. You may also change the fillings as per your taste.
- While taking out the container from the cooker & whipping the batter, Be Cautious. They will be steaming hot.
