Ingredients:
Moth Beans(Turkish Grams) 500 gm
Salt ¼ tsp
Potato 2 Medium
Onion 2 Medium
Tomato 2 Medium
Khatti-Meethi Chutney as per taste
Lemon Juice as per taste
Green Chilli as per taste
Black Salt as per taste
Oil For potato finger

Moth Beans are very nutritious. Its nutritions in 100g of raw
mature seeds are:
Energy 343 kcal,
Carbohydrates 61.5 g,
Fat 1.6 g,
Protein 22.9 g,
Vitamin B (B1, B3, B5, B6 & B9)
Vitamin C
Minerals (Calcium, Iron & Magnesium)
Method:
- Soak Moth Beans for 4-6 hours.
- Add ¼ tsp salt & boil it in pressure cooker for one whistle in high flame.
- When the pressure is released, strain all the water.
- Wash moth with fresh water.
- Make ready crispy fried potato fingers.
- In moth, add finely chopped onion, tomato, coriander leaves, khatti-meethi chutney, lemon juice, fried potato fingers, green chilli & black salt, as per taste.
- Now, its ready to serve.
Tip:
- Don’t allow more than one whistle as that would result into the overcooking of Moth Beans. Overcooking would further lead to over-softening of the Beans.
- The crispy fried potato fingers should be added in the last so that it remains crispy while being served in the juicy moth chaat.
