Bottle Guard is normally perceived as a veggie for health conscious/patients.
But my today’s post is a mouth watering recipe prepared with bottle guard. So
don’t just perceive, but try it.
Lauki ke kofte
- Bottle Gourd (Lauki) 500 gm.
- Gram Flour (Besan) 50gm.
- Salt as par taste
- Onion 3 medium
- Garlic 5to 6 pods
- Tomato 2 medium
- Turmeric Powder ¼ tsp
- Coriander Powder ½ tsp
- Chilli Powder as per taste
- Oil for frying & gravy
- Fresh Coriander for garnishing
Method:
- Make masala paste of onion, garlic & tomato and keep it ready.
- Peel and grate the bottle gourds. After doing so, squeeze them up, so that excess water is drained out. Keep this water aside for the gravy.
- Now, add gram flour and salt to it & mix them well.
- Side by side, take a wok and heat up the oil in it.
- Make balls of about 1” out of the mixture, by pressing it tightly in your fist (मुट्ठी). It will further release some excess water. Also, collect the water released in this process.
- (If you are unable to form balls as in the step above, add a little gram flour, mix it well and then try.)
- Now, gently slide the balls one by one along the surface of the wok into it.
- Keep the flame sim.
- When the balls start browning from one side, flip them up. This will result in the balls getting golden-brown evenly.
- After the balls are done, strain them out. Then, reduce the oil from the wok.
- Now, add the masala paste of onion, garlic & tomato, salt, turmeric powder, coriander powder & chilli powder to the wok. Sauté them well.
- Then, add the collected water in steps above into the wok. Add further water, for gravy.
- Boil the gravy for consistency.
- Before serving, place the balls into the gravy and put on the flame for one boil.
- Garnish it with fresh coriander and serve it.
