Tip for preparing soft and spongy cakes
- Your oven should be pre-heated.
- Sieving all purpose flour(maida) & baking powder makes them aerated, helping in making soft and spongy cakes.
- Before adding maida, the mixture of sugar & egg or sugar & butter(for egg-less) should have such consistency that ribbons can be formed.
- Always mix maida by using cross and fold method for cake batter; because this will not reduce the fluffiness of beaten egg.
- As soon as the batter is prepared, immediately keep it for baking, else the cake wouldn’t be spongy.
