For some time, we had prepared many veggies with masala
gravy. As such, I was getting requests for posting recipes of veggies with gravy
but without onion-garlic. Matching it with the seasonal veggies, now presenting
Arbi-e-khas. The ones who like masala gravy, should also try this. It will give
you a new horizon of taste.
Arbi-e-khas
Colocasia(Arbi) - 500 gm.
Clarified butter (Ghee) - 2tbsp
Salt - to taste
Turmeric - ½ tsp
Carom seeds (Ajwain) - ½ tsp.
Asafoetida (Hing) - ¼ tsp.
Coriander powder - 2 tsp
Gararm masala powder - ½ tsp.
Curd - 100 gm.
Red chilli powder - optional
Method:
- Peel the colocasia; cut it in finger shapes and wash it properly.
- Heat ghee in a pressure cooker.
- Add Hing & Ajwain followed by Arbi fingers.
- Fry the fingers on high flame.
- Once the fingers are fried, reduce the flame to sim.
- Add Ginger paste; all the dry masala and salt to taste. Mix & Saute it well.
- Add curd & mix it well.
- Add water for gravy. Close the lid and allow three whistles on high flame.
Your veggie is ready. Serve it after garnishing with fresh coriander.
