Recipe : Sabudana Vada

Sabudana Vada


Ingredients:
  • Boiled Potato – 500gm
  • Tapioca pearls- 250 gm
  • Halite (sendha namak)    according to taste
  •  Fresh coriander – 50 gm
  • Green chill- as par taste
  • Cumin  ½ tsp.
  • Pure ghee – for frying

Method:
  1. Soak sabudana in water for 4-5 hours. After soaking, seive it and keep it aside in the strainer for about ½ hour. It will allow the excess water to get drained from sabudana.
  2. Mix and mash soaked & drained sabudana with boiled potatoes and all other ingredients mentioned above. Make about 1 inch balls out of the dough.
  3. Take a wok and place ghee on flame for frying.
  4. When ghee is heated for frying, gently slide the balls one by one along the surface of the wok into it.
  5. Keep the flame sim.
  6. When the balls start browning from one side, flip them up. This will result in the balls getting golden-brown evenly.
  7. After the balls are done, strain them out.
  8. Tip: If you want the vada to be more crispy, you can increase the proportion of sabudana. But this has to be done cautiously, as it will increase its splattering tendency, while frying.
